Organic soybeans are ground and cooked before pressing to produce soymilk and
okara (fibre). Natural nigari (produced from seawater) is used to coagulate the
soymilk and the resulting curds are pressed into blocks of tofu. These are stored
in cooling tanks and cut to the required sizes ready for vacuum-packing.
